Food Service in Seneca County Correctional FacilityDescription: SPECIFICATIONS: Scope of Services The Contractor shall provide daily food service for SCCF, including: • Cold breakfast for inmates and 10 staff per meal. • Hot lunch and hot dinner for inmates and 10 staff per meal. • All meals must meet NYS SCOC nutritional guidelines. • Menu must be approved by a registered dietitian. • Special diets (medical/religious) must be accommodated. • Meals must be delivered and ready to serve at designated times. • Contractor must provide disposable serviceware, napkins, and condiments. • Maintain compliance with all NYS Department of Health food safety requirements. Minimum Qualifications • Experience providing food services in correctional, institutional, or large-scale settings. • Knowledge of NYS SCOC nutritional standards for incarcerated individuals. • Compliance with all health and safety regulations. • Ability to meet production and delivery timelines. Standards and Compliance The Contractor shall comply with: • NYS COC Minimum Standards for Food Service. • NYS Department of Health regulations. • HACCP and safe food handling practices. Menu Requirements Proposers must submit a 4-week sample menu with the proposal, indicating portion sizes, nutritional values, and any rotating items. Menu must include: • Cold breakfast options (e.g., cereal, milk, juice, fruit, bread). • Hot lunch and dinner options (entrée, side, vegetable, dessert/beverage). • Variety and cultural diversity in meal options. • Accommodation for special diets. No proposal will include textured vegan protein or mechanically separated chicken or turkey.
